But it drives me bonkers that I can't edit my trades. I have to cancel them if I made a mistake or want to add things to my intended trade. It'd be much more convenient if I could edit my trade.

Or once they edit the content of the trade - all the current offers are declined with automatic message "your offer was refunded because the trade was edited" (editing title or description wouldn't do this). That prevents the scams and let's people interested in the trade know that it was changed. They can see if they're still interested and they can offer again. It's way better than what we have to do right now - so cancel and make new one.
