I can't say too much about waterholes, but the marshlands/marshes are almost definitely the best places to send your lionesses to hunt. Multiple well trained/high level lionesses will generally bring 2 elephant carcasses when all sent to marshland tiles in my experience. Watering holes are not bad substitutes however, as there is a chance for your lionesses to hunt down 1 buffalo per hunt I believe, but the marshes seem to be better if they are available as you're likely to get more uses of food (2 elephant carcasses = 10 uses of food vs 1 buffalo carcass = 6 uses of food).

Waterholes are good, you can get water buffalo and adult giraffe with high level lionesses, the giraffe is harder to get but is possible. Zebras are also available there.

Of course there is also the downside of getting human legs and some useless things, but I generally hunt the waterholes and jungle areas.
