I'm currently trying to figure out if it's better to breed with my starter lion, or save up and pay a stud fee for something more interesting. When is it worth it to invest?

I would use other studs that have markings you like along with a mutation. As for investing that depends what you want to invest on.

If its lions with certain traits or mutations i'd check out the trading center as the lion market is pretty trash atm so you could find good lions for pretty cheap.

If you want to invest on getting gb/sb the main big way to profit is to grind events, especially February, September, and October (would grind April as well for the energy item to use in those events) as they have breeding items that you can save and resell later for good profit^^
