I'm busy lately with the holidays, but I'm adding this to my subscriptions because I would love a one-on-one RP someday :) I don't have discord, but I can RP with the following- here on Lioden messages, skype or even texting (as long as its iphone to iphone because I don't have good cell service where I live and iphone to iphone can send texts via internet unlike iphone to android)

Heyo! I'm interested in doing one with you if you are still looking. I have a couple plots that may fulfill your desire for a fantasy rpg. I'm more than willing to send them to you through PM.

A bit about me:
I'm 21 and have been role playing for about 10 - 11 years. I haven't been super active in the community as of late due to work, but I am trying to get back into it. That being said I may be a little rusty at first and unable to make super long/thought out posts. I absolutely love doing world building and story/character development. It's one of my favorite parts of role playing. I have a large list of OCs including all sorts of genders and sexualities (meaning i can play whatever type of character is necessary).
I'm open to a lot of topics like gore, romance, important character deaths, etc. I'm also open to smut. However, it's not my favorite thing to write. Plot wise I'm also very open if the ones I have aren't of interest. I don't enjoy things like mystery/crime or regular school/work based ones, though. They just always end up too boring and I lose interest.
When it comes to my activity I can't promise a consistent schedule. At least not right now. That's one of the many joys of working in retail during the holidays (they say sarcastically xD). I also have a tendency to disappear and forget to post. Like you I'm fine being reminded that I need to, but I prefer not to be pestered. I totally understand if this inconsistency is something that turns you away from RPing with me! I promise I won't take any offense to it.
I can't think of what else to say, so I'm going to call it there. If you have any questions please don't hesitate to ask! I'm open to answering whatever you'd like to know (:
