You should read the wiki - some NPCs are more able to defeat than others. As an example, the strangle button can be more effectful on certain enemies then others. Also your stats really help as well, even though some don't know it!

Personal experience - stats DONT help much. I have tried 20, 200, and 2000 stats and they all miss exactly the same. There's really not much you can do to help against missing because its happening randomly, often, and is not affected by anything. Stock up on Lucky Feet to guarantee a win if your battle goes the bad way, is the only thing really.

Ohhh, interesting. I’m still very new here, came from Wolvden. I didn’t realize we had lucky feet here as well!

Key here is "some of the time" - so when it feels stats help, do check if your missing rate remains consistent the other day and later! It might be you just get a lucky strike and your king doesnt miss often for the day, then next day he will be missing as usual.

Lioden lucky feet are different from Wolvden - here, they win you the battle immediately, rather than just slightly improving your odds!
