So, Iโ€™m curious. Iโ€™m nowhere near replacement, but when you choose a new king does the heritage get wiped and starts again as a ncl? So like if you grab a lion you like stat wise and marking wise but itโ€™s got a big lineage can you choose that lion to become king and itโ€™ll just be unknown x unknown or does the heritage stay the same? If that makes any sense.

No, new king will have all heritage of the heir. In order to have a heritageless king, you need a heritageless heir - a Groupie lion, they are special lions obtained in May that can be adolescent males without heritage. Keeping old king's look and retiring him to heritageless lion, you get a pretty heritageless king. His stats however also follow the heir, so extra-high stat lions can only come with long heritage that cannot be removed in any way. In order to have high stat heritageless king, you need to train a heritageless male to have those stats.
